According to the V&A, after Prince Albert died in 1861, wearing etiquette-correct mourning became "an increasingly important signifier of social respectability".
Goth takes a silhouette and a palette from that world, not a period costume. Nobody needs a crinoline or a bustle for an evening out. Start at the neck
A covered neck is the quickest signal there is. An open neckline reads as modern, or as romantic goth. A collar at the throat reads as the nineteenth century.

Victorian goth colours: dressing by the mourning calendar
Black is only the first stage. The V&A's record for a nineteenth-century crêpe mourning shawl sets out how a widow's dress changed over time. Full mourning lasted a year, in "matte black fabrics without embellishment and worn without jewellery". After that she could add trimmings and simple jewellery. In half-mourning she could bring in "grey and subtle shades of purple". Crêpe, the fabric most tied to it, was a crimped cloth often woven from worsted and silk. That sequence makes a practical colour plan. Follow it across a season, or pick one stage for the night.
